Beef Stroganoff

One of my family’s favorite meals. The ingredients list egg noodles but any kind of noodles work fine. A word of advice, keep the stroganoff mixture separate from the noodles, that way the noodles don’t get soggy if you have leftovers. Also, for speed, try cooking you noodles in a separate pot right when you add the mushrooms. Whole thing can be put together in about 15 minutes if you have everything you need.

Ingredients:

1.5 lb. lean ground beef
1 small onion, chopped
1 clove freshly minced garlic
1 t. Salt
1/2 t. pepper
8 oz. sliced mushrooms
4 oz. light cream cheese, cubed
2 c. low-sodium beef broth
1/2 lowfat milk
3 T. flour
1/2 c. light sour cream
Salt and Pepper to taste
Cooked egg noodles

 

Directions

  1. In a large pan, cook ground beef, onion, garlic, and seasonings (salt and pepper) until nearly cooked (slight pink).
  2. Add mushrooms to the pan and finish cooking all
  3. Add the cream cheese to the mixture, let melt for 2 to 3 minutes before stirring
  4. In separate bowl, combine the beef broth and milk. Slowly whisk in all the flour until the mixture is smooth
  5. Add the liquid mixture to the pan, stir 3-4 minutes
  6. Stir in the sour cream and any additional seasonings for taste. Serve over cooked noodles of your choice.
