Beef Stroganoff
One of my family’s favorite meals. The ingredients list egg noodles but any kind of noodles work fine. A word of advice, keep the stroganoff mixture separate from the noodles, that way the noodles don’t get soggy if you have leftovers. Also, for speed, try cooking you noodles in a separate pot right when you add the mushrooms. Whole thing can be put together in about 15 minutes if you have everything you need.
Ingredients:
1.5 lb. lean ground beef
1 small onion, chopped
1 clove freshly minced garlic
1 t. Salt
1/2 t. pepper
8 oz. sliced mushrooms
4 oz. light cream cheese, cubed
2 c. low-sodium beef broth
1/2 lowfat milk
3 T. flour
1/2 c. light sour cream
Salt and Pepper to taste

Directions
- In a large pan, cook ground beef, onion, garlic, and seasonings (salt and pepper) until nearly cooked (slight pink).
- Add mushrooms to the pan and finish cooking all
- Add the cream cheese to the mixture, let melt for 2 to 3 minutes before stirring
- In separate bowl, combine the beef broth and milk. Slowly whisk in all the flour until the mixture is smooth
- Add the liquid mixture to the pan, stir 3-4 minutes
- Stir in the sour cream and any additional seasonings for taste. Serve over cooked noodles of your choice.
